- 8 ounces spaghetti or other long pasta
- 1 block 14-ounce extra-firm tofu, drained and pressed
- 1/2 cup vegetable broth
- 1 small onion diced
- 3 cloves garlic minced
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes optional
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup canned green olives pitted and sliced
- 1/4 cup chopped fresh parsley
cook the pasta according to package directions, drain, and set aside.
cut the pressed tofu into bite-sized cubes.
in a dry non-stick skillet, sauté the tofu over medium-high heat for 8-10 minutes, or until golden brown on all sides.
