sunday night, me and my partner were craving something delicious yet healthy. after a few minutes of debate, we decided to make homemade vegan burgers!

we gathered the ingredients and quickly got to work in our cozy kitchen. i love cooking almost as much as my partner loves eating so this was always the highlight of our weekend.

we sautéed all the vegetables until they were nice and soft then set them aside. then it was time to form and cook up those patties! then we pressed each one into shape before putting them on a baking sheet with parchment paper so they wouldn’t stick. 

after everything was cooked perfectly, it was time to assemble these babies! you can put pretty much whatever you want on vegan burgers but we kept it simple with mustard, spinach, tomato and onion (plus mushrooms just for me). the smell coming from our kitchen made us both drool; we couldn’t wait any longer! 

once fully assembled we headed over to the couch and turned on an episode of the real housewives while digging into our juicy burgers. to complete this meal we also had a huge pile of french fries with lots of vegan-friendly sauces for dipping – yummmm!! it’s safe to say that sunday night dinner was a success.

  • 1 cup rolled oats use gluten-free if needed
  • 1/2 cup vegetable broth
  • 1/2 cup grated carrots
  • 1/2 cup finely chopped mushrooms
  • 1/2 cup chopped spinach fresh
  • 1/4 cup diced onion
  • 1/4 cup tomato paste
  • 1/4 cup nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper to taste

instructions
 

  • in a large mixing bowl, combine the rolled oats and vegetable broth. let the mixture sit for 3-5 minutes, or until the oats have absorbed the broth.
  • while the oats are soaking, in a separate pan over medium heat, sauté the grated carrots, chopped mushrooms, chopped spinach, and diced onion until softened.
  • add the sautéed veggies to the mixing bowl with the oats.
  • next, add the tomato paste, nutritional yeast, garlic powder, onion powder, salt, and pepper. mix everything together until well combined.
  • form the mixture into 8 evenly-sized patties.
  • preheat your oven to 375 f (190 c) and place the patties onto a baking sheet lined with parchment paper.
  • bake for 25-30 minutes, or until the burgers are firm and crispy on the outside.
  • once done, remove from the oven and allow the burgers to cool slightly before serving on buns with your favorite toppings.
